I want to replace a PTZ with 2 IP cameras and send their video down a single coax?

I am using NVT FLEX Switches that provide POE but I don't want to run an additional cable unless I have to?

Assuming you have enough bandwidth you can run many cameras down a single link. You will just need the poe switch to be at the end of the cox run once its converted to Ethernet
